Experimental roulade, tests #1 and 2

Experimental cake attempt today. This is a roulade, so it’s going to be 24h of refrigeration before I know how it turned out, but I suspect that the production version is somewhat better.

Grr. The problem with this cake is having to wait to find out what happened. But one bite tomorrow should tell me what I need to know to make the next version really damned good.

  1. So what was experimental about it this time?

  2. Our patissière at work made something similar a few weeks ago, and I got her recipe out of her. So this was an attempt to hybridize the two. It involved changes like adding butter at an unexpected stage, (may or may not work) the use of hazelnut meal, (good, but requires some slight procedure changes) and using bittersweet instead of semisweet chocolate. (I suspect not good, but I’ll find out in a few hours)

  3. So…???

  4. A few more hours to go. Once I know, I’ll post final notes. 🙂

  5. oooh, I look forward to reading the results…and getting the recipe? 😀

  6. I’ll write out notes on experimental roulade #3 soon. BTW, are you guys going to be around this weekend? I’m going to be in Boulder for a work trip.

  7. Yay! Yony visit! We’ll be here — let’s plan on…something or other. Dinner? Sunday breakfast?

  8. Both sound good. Let’s sync up once I’m there; I’ve still got to make plans w/family. 🙂
